WET RUBS... Aztec Rub 1 cup cumin seeds crushed 1/3 cup minced garlic 3 tablespoon coarse salt 1/4 cup liquid smoke 1 tablespoon cayenne pepper 1 cup olive oil Combine all ingredients, except oil in the bowl of a food processor and process until smooth. Slowly add oil with the motor running. Cover and refrigerate until ready to use. Makes about 2 cups. Chili Paste 1 Lemon (and zest) 1 Lime (and zest) 1 orange (and zest) 1/2 green chili, or more to taste (chopped with or without seeds) 5 garlic cloves (finely crushed) 3 tablespoons mild chili powder 1 tablespoon olive oil 1 tablespoon paprika 1 teaspoon ground cumin 1 teaspoon salt 1/2 teaspoon dried oregano 1/4 teaspoon ground cinnamon Mix 1/2 teaspoon of each fruit zest and all the juices with other ingredients. Add more spices if desired. Let stand at least 30 minutes before using (should thicken). Chili Wet Rub 2 tablespoons hot chili powder 1 teaspoon cayenne 1 teaspoon fresh ground pepper 2 teaspoons garlic powder 2 teaspoons lemon juice Mix all ingredients together. Country Rub 2 cups crushed real bacon bits 2 cups minced parsley 2 cups tomato paste 1/3 cup cracked black pepper 1/3 cup paprika Mix all ingredients together. Store in an airtight container. Creole Rub 1/2 cup Creole mustard 1/2 cup minced onion 1 1/2 tablespoons minced garlic 1 tablespoon hot pepper sauce 1/4 cup dry Cajun seasoning blend Mix together. Store in air tight container. Devil's Rub 3/4 cup minced garlic 1/2 cup packed brown sugar 1/2 cup white vinegar 1/4 cup red pepper flakes 1/4 cup tomato paste 3 tablespoons hot pepper sauce 2 tablespoons coarse salt Mix all ingredients together. Store in an airtight container. Garlic Rub 1/4 cup olive oil 5 cloves garlic, crushed 1 tablespoon fresh parsley 1 teaspoon cayenne Mix garlic, parsley and cayenne together. Slowly add oil while mixing. Store in refrigerator in air tight container. Mustard Rub 2 cups Dijon mustard 1 cup minced parsley 1/2 cup dried orange or lemon peel 1/2 cup rosemary leaves, crushed 1/4 cup black pepper Mix together. Store in refrigerator in air tight container. Panhandle Rub 1/2 cup ground cumin of crushed cumin seeds 1/2 cup minced cilantro 1/2 cup tomato paste 1/4 cup minced garlic 1/4 cup vegetable oil 2 tablespoons red pepper flakes Mix all ingredients except oil together. Slowly add oil while mixing. Store in refrigerator in air tight container. Southwestern Wet Rub for Brisket 2 tablespoon cayenne 1 tablespoon paprika 3 tablespoon brown sugar 1 tablespoon salt 1 tablespoon onion powder 1 tablespoon black pepper 1 teaspoon cumin 2 tablespoons Worcestershire sauce 1 tablespoon Tabasco 3 cloves garlic crushed Mix all ingredients together. Store in refrigerator in air tight container. Multiple this recipe if you wish to use frequently. |
